45 Nutt--Good idea- a recipe section. Back at Shooters David Wallace down in Australia had never eaten corn bread and really liked my Mexican cornbread recipe. In fact he shared the recipe with a cafe there that put it on their menu. Now the problem is with the communication gap between a Texan and an Australian and with him having to substitute certain things he couldn't get in Aussieland its hard to say whether he had cornbread or not.

I have a couple of more recipes I'll post some other time,but will post this one first as it's so simple and I have it memorized. My dad made the world's best biscuits and mine are good--but never as good as his were. You only need 4 things. Salt,SELF RISING FLOUR,buttermilk and grease. Mix the salt,buttermilk and flour(Be sure it's self rising flour)into a moist paste. You want this to be fairly moist--more buttermilk or less flour moistens it so as you begin mixing add more buttermilk if needed. It takes a fairly healthy dose of salt. After mixed by hand form into biscuits. Have a greased platter ready and when you place the biscuits onto the platter,turn them over so that the tops were greased. Bake---that's it. You can roll out this mixture maybe make it a little drier and it makes a great pizza crust. I would appreciate hearing the results of those that try this.

My Cousin makes those. It totally blew my mind the first time I watched her make them (yeah, crisco and all). Whenever I visit the family farm, she always talks me into working but she feeds me very well for what I do. Every meal has those biscuits AND every meal she cooks seems like a Sunday dinner. Breakfast, lunch and dinners are complete meals, all vegies are fresh, the meat (steaks, porkchops, roast) is either from our stock or the butcher and the tea is very cold, homemade mac with cheese, fresh salad, snap beans or butter beans. Breakfast is eggs, bacon, sausage, grits, biscuits, milk, juice and coffee. I have joked with her that if she was a little further down the line from first cousin I would marry her and move there.

OK, here's a simple one I do for potlucks.
An old Southwestern dish
Pesole
Brown one pound sausage. Add two jars salsa, with cilantro. Drain two to three cans of hominy, and add. Heat, and your done. Takes 15-20 minutes.

I recall he was pretty much lost on black eyed peas, and sowbelly.

Are we going to have a section for heartburn remedies? I can see some of these concoctions are going to call for something to put out the fire. I remember a fly in fishing trip up by Great Slave Lake, I could have made big money by selling Rollaids at a buck apiece after one of the guys made some special homemade stew. It tasted good but it stayed with you.
